    Nguyên liệu:

    500g bột gạo, bột sắn lọc tươi 500g, tôm 600g, thịt ba chỉ 300g, ruốc 1M, muối bột , nước mắm, dầu chiên, tiêu, gia vị bột ngọt, hành củ, hành cây, ớt bột nhỏ ớt đỏ, màu gạch cua hay điều dầu.

    Theo công thức: 1 bát bột gạo + 1,5 chén nước, 300g tôm tươi, 150g thịt ba chỉ.

    Cách làm:

    Pha bột: 1 bát bột gạo + 1,5 chén con nước quấy đều. Để một lát cho bột tan hết.

    Làm tôm: Tôm rửa sạch sẽ, nấu cho chín, bóc vỏ ( lấy nước lèo nước lèo). Tôm lau ráo, quết nhuyễn trôn với hành củ nhỏ dại, chút muối hạt, hạt tiêu, gia vị mì chính & một chút màu gạch cua cho đẹp.

    Múc các thành phần hỗn hợp bột vào 1 bao nilon, cắt ngay góc bao, rê vào một nồi nước đang sôi để luộc bánh. Khi bánh canh nổi lên hết dùng đũa đảo nhẹ rồi nhắc ra, gạn khô bớt nước qua 1 nồi khác, đậy vung lại cho bột nở tiếp.(Nếu luộc nhiều phải chắt bớt nước ra luộc nhiều lần không nát bột)

    Nấu nước dùng: cho một chút ít nước vào nồi bột lúc nãy còn dính vét cho hết +phần nước dùng để luộc bột + nước đã luộc tôm + muối + nước mắm + nước ruốc,+ hành tím xắt từng lát and hành tím phi vàng bột ngọt đun lên cho sôi, rồi đổ vào soong bánh canh.

    Làm nhân ( nhụy) : Tôm bắt mỗi từng miếng chả nhỏ tuổi cỡ lóng tay. Phi hành cho thơm với một chút ít ớt bột + nước bột sắn + nước tôm,+ nước mắm nam ngư. Khi bột sánh để thịt ba rọi thái lát mỏng tanh & chả tôm vào nấu cho thấm. Sau cuối là hành lá xắt nhuyễn, ớt băm and rau xanh răm xắt nhỏ tuổi.

    Sau đợt tăng giá bất thường dịp trước tết, đến nay giá trứng gia cầm đang sụt giá thê thảm. Ở nhiều nơi, do không tiêu thụ được trứng, chủ trại chăn nuôi lâm cảnh thua lỗ, nợ nần, phải đem vứt bỏ trứng.

    Trang trại đổ bỏ trứng

    Đã hơn 1 tháng nay, ông Đinh Sỹ Chung ở xã Yên Sơn, thị xã Tam Điệp (Ninh Bình) cứ mỗi lần nhìn thấy gà đẻ trứng ra là lại… sợ. Sợ bởi gà đẻ càng nhiều, lượng trứng tồn kho càng lớn. Nếu trước tết, giá mỗi quả trứng 2.200 đồng, thì thời điểm này dù đã giảm chỉ còn 1.100 đồng/quả, nhưng vẫn không có người mua.

    Hiện nay, hàng ngày công nhân phải nhặt ra số trứng hết hạn để bỏ đi hoặc làm thức ăn chăn nuôi. Ông Chung tiết lộ là gần đây trang trại đã phải đổ bỏ 2 xe trứng, mỗi xe khỏang 200.000 quả.

    Ông Đinh Quốc Sự – Chi cục Thú y tỉnh Ninh Bình cho biết: Ở Ninh Bình có 3 trang trại chăn nuôi gà lớn, trong đó trang trại của ông Đinh Sỹ Chung lớn nhất, những trang trại còn lại nuôi 5.000 – 10.000 gà đẻ. Trang trại của ông Chung rộng 3ha với tổng vốn đầu tư trên 30 tỷ đồng, có 6 dãy nhà chăn nuôi (mỗi gian rộng 1.200m2) với công suất tối đa có thể nuôi tới hơn 60.000 gà, song hiện tại lượng gà đã giảm 40% và số công nhân cũng phải cắt giảm 40% so với thời điểm cuối năm 2012.

    “Để làm ra được 1 quả trứng gà công nghiệp, chi phí con giống, thức ăn, tiền công… ít nhất 1.700 – 1.800 đồng/quả, với giá bán chỉ 1.100 đồng, mỗi quả trứng bị lỗ 600-700 đồng/quả” – ông Chung cho biết. Dù đã chủ động cắt giảm đàn gà, nhưng tính trung bình, mỗi ngày trang trại của ông đang lỗ 15-18 triệu đồng.

    Tại trang trại của ông Đinh Sỹ Chung (xã Yên Sơn, thị xã Tam Điệp, Ninh Bình) đang tồn kho hơn 300.000 quả trứng.

    Vốn là một chủ trang trại nuôi gà lớn nhất miền Bắc, song thời điểm này, ông Phạm Văn Lợi (xã Ái Quốc, TP. Hải Dương, tỉnh Hải Dương) cũng đang điêu đứng do không tiêu thụ được trứng. Để “giải phóng” số lượng trứng tồn khổng lồ, ông đã phải chấp nhận ký hợp đồng để bán cho một số nơi với giá chỉ còn 50% (1.000 đồng/quả). Ông Lợi tâm sự: “Từ sau Tết Nguyên đán tới nay, do sức mua giảm, chúng tôi đã phải cắt giảm 50% nhân công và giảm số lượng gà từ 140.000 xuống 60.000 con”.

    Không chỉ có trứng mà giá gà thương phẩm, cả giá gà giống và gà thương phẩm cũng đang giảm mạnh. Ông Hoàng Huy Hào ở thôn Đồng Lâm, xã Đồng Kỳ, huyện Yên Thế (Bắc Giang) cho biết, giá gà chỉ được một thời gian trước Tết Nguyên đán tăng cao, hiện đã giảm chỉ còn 58.000 đồng/kg, nếu hạch toán cụ thể, hiện người nuôi đã lỗ 3-5 triệu đồng/1.000 con gà.

    Trong khi đó, theo ông Vũ Kỳ Truyền – chủ trại gà giống ở Chương Mỹ (Hà Nội), trước tết, giá gà thương phẩm nhích lên, lượng tiêu thụ cao nên giá gà giống cũng tăng theo. Tuy nhiên chỉ được khoảng 2 tháng, sau tết nhu cầu gà thịt giảm mạnh, giá gà giống lại tụt dốc, không thể bù được khoản lỗ cả năm 2012. Vì thế, theo ông Truyền, nếu chăn nuôi trong nước cứ bấp bênh như hiện nay, mà thiếu sự can thiệp của Nhà nước bảo hộ người chăn nuôi thì chỉ trong vài năm nữa ngành chăn nuôi trong nước sẽ “chết”.

    Theo nhiều chủ trang trại, họ đang phải đánh cược trong một “cuộc chơi không sòng phẳng” trên thị trường chăn nuôi hiện nay. Ông Đinh Sỹ Chung cho biết, trong suốt 10 năm làm trang trại, đến nay ông chưa được hỗ trợ bất cứ một chính sách, hỗ trợ gì từ Nhà nước.

    Từ việc làm trang trại phải bỏ tiền ra mua đất đến con giống, khoa học kỹ thuật, đầu ra cho sản phẩm… kể cả tiền mua thức ăn chăn nuôi là chi phí tốn nhất (trung bình mỗi ngày mất 80 triệu đồng), nhưng cũng rất khó để vay được vốn từ ngân hàng.

    Suốt từ tháng 2 -11/2012, chăn nuôi liên tiếp thua lỗ, có thời điểm giá trứng còn 900 đồng/quả, nhưng đến cuối năm giá trứng tăng lên là thời điểm gỡ lại tiền lỗ vốn thì Bộ Công Thương lại dùng mệnh lệnh hành chính bắt hạ giá xuống, làm cho giá trứng của hộ chăn nuôi cũng phải hạ theo.

    “Tôi lỗ cả năm 1,5 tỷ có ai quan tâm tới không? Nếu nói là tăng giá trứng cao, thì thời điểm cuối năm 2012 cũng chỉ đạt 2.500 đồng/quả, tức là giá bán cũng chỉ cao hơn giá thành sản xuất có 500 đồng và người tiêu dùng có ăn trứng cũng chỉ phải chi phí thêm vài nghìn đồng.

    Hiện giá trứng rẻ sao không thấy người tiêu dùng phàn nàn? Theo tôi, phải đưa ra quỹ bình ổn giá để hỗ trợ người chăn nuôi như chúng tôi chứ không thể tạo ra một sân chơi không công bằng như hiện nay được” – ông Chung bức xúc.

    Ông Nguyễn Đức Trọng – Phó Cục trưởng Cục chăn nuôi (Bộ NNPTNT) cho rằng năm 2012, người chăn nuôi thua lỗ triền miên trong suốt 7 tháng nhưng khi giá tăng lên là thời điểm gỡ lại, thì lại bị ép giảm giá xuống nên chưa thể bù lỗ.

    “Hiện nay, khi giá giảm chẳng thấy có ai nhắc tới nỗi khổ của người chăn nuôi cả. Trứng hiện không phải là mặt hàng bình ổn giá, nên theo tôi nếu đã can thiệp thì phải can thiệp cả lúc giá tăng và lúc giảm để đảm bảo cho người chăn nuôi ít nhất bán được bằng giá thành sản xuất” – ông Trọng nói.

  • Say what you want about Vietnamese food, but it’s hard to deny its uniqueness and special appeal.

    Even in a dish like ca kho to, which is a fairly everyday dish from the South, what you see (and what you get) is a persity of ingredients exquisitely cooked in unptentious, simple but really effective ways.

    And yet it’s still but the tip of the iceberg for this culinary excursion. This particular braised fish is more indicative of the southern style, though there are entirely other culinary worlds up and around the Vietnamese countryside as well.

    To start ping into what’s shaped Vietnamese cuisine as it is today, we’ll start with perhaps the greatest influence on the cuisine across all three of its major food regions: the Chinese.

    Up until the founding of the Triệu dynasty in the 3rd century BC, the lands of Vietnam were inhabited by fairly autonomous and independent Austronesian ethnic groups separate from their neighbors, the Chinese. The dynasties prior to the Triệusuccessfully united these perse ethnic groups under one common political identity, but it was one more in co-existence with the Chinese than under control.

    The Triệu dynasty changed all of that. While a fairly short lived dynasty of only about ~100 years, the Triệu – founded and led by a defected Chinese military commander – conquered and developed a large expanse of land across modern-day North Vietnam and the Guangxi province of South China to create the Kingdom of Nam Viet. The King of Nam Viet, Triệu Đà, fairly audaciously proclaimed himself an equal to his “peer” up North, the emperor of the Chinese Han dynasty.

    Each successive Chinese dynasty, with a few exceptions, effectively quashed any attempts at independence staged by the Vietnamese. The Vietnamese finally succeeded in the 10th century and once again became a free state, a designation they would enjoy for nearly another millennium again.

    The Kingdom of Champa

    While those in the northern parts of contemporary Vietnam were under Chinese control, the peoples of South and Central Vietnam experienced an entirely different sort of lifestyle.

    The kingdom of Champa was founded in the late 2nd century AD in the modern-day city of Hue, when a local leader rebelled against the Han dynasty. As successful as the Han were in the north at quelling rebellion and dissidence, the Han were ptty ineffective in trying to retake the Kingdom of Champa as their own.

    At its peak between the 7th and 10th centuries, Champa reached its peak and dominated the trade routes between the Chinese, the Indians, the Indonesian islands and everything in between. By the time the Northern kingdom of Viet Nam gained independence from the Han, however, they soon eroded this dominance by invading Champa and clashing with the Cham.

    With the collapse of Champa, many Cham people would migrate into the land of the Khmers (modern day Cambodia), though some would eventually re-settle back into Vietnam.

    It’s fair to say that the different histories, cultures and ethnicities have played a large part in the starkly different regional cuisines that have developed in modern day Vietnam. To make things all the more complex, we’re going to also add climate and agricultural differences into the mix as well.

    The Vietnamese cuisine can be broadly split among its three different regions: the North, the Center and the South.

    Generally, Northern Vietnamese cuisine is most closely linked to that of traditional Chinese cuisine. The cooking is overall more ” conservative ” and is less spicy than elsewhere in the country, and there are a large proportion of stir-fried and noodle-based dishes.

    The center of Vietnam, on the other hand, has a slightly more decorated and sophisticated feel to it. The city of Hue served as the imperial capital during the Nguyễn dynasty between the 19th and early 20th centuries, where the royal chefs of the court experimented and developed more elaborate dishes than the traditional Vietnamese cuisine. Compared to the north, central Vietnam has more earthier and spicier types of dishes.

    Finally, there’s the South, where ca kho to is best known. One of the starkest characteristics of Southern Vietnamese cuisine is its tropical feel. Partly because of the tropical climate’s influence on local agriculture (like coconut groves) as well as the pvailing Indian cultural psence from the days of Champa, southern Vietnamese food – like we’ll see with ca kho to – is considerably sweeter and has a far wider spectrum of balanced sweet/salty flavors to it, with a kick of heat. In any given meal, you might see anything from the very spicy to the calmly sweet in one bite.

    A decidedly southern dish in style, ca kho to is a smooth, caramelized braised fish slowly and passively cooked in a clay pot to better retain heat and help with the caramelization process.

    Translating the dishes name helps to give us some insight as to what we’re going to do today with this recipe. The word in Vietnamese means fish, which is simple enough. Tộ refers to the clay pot in which the dish is commonly ppared in… which brings us to kho.

    The Art of Kho

    Kho is a method intent on keeping the muscle tissue cells of your protein moisturized during the cooking process. Whereas most drier methods (think sautéing) will cause the protein to release water and tighten up, the art of kho is to keep the protein in an environment where osmosis favors water going in, not out.

    One of the keys to kho is to cook everything extremely passively and on a low simmer. In the case of ca kho to, once you’ve set your filets and submerged them in their marinade, you simply let it sit and simmer until it has braised to a moist, meaty texture.

    Preparation

    To make your ca kho to, start by marinating your thicker fish filets. In Vietnamese cooking, there’s a sort of ying-yang ideal to combining ingredients, except that there are “hot” ingredients and “cold” ingredients that are intended to bring the body into balance.

    To create the marinade, take some garlic, shallots, chilis and some nước mắm, a type of fermented fish sauce that is pvalent in all Vietnamese cooking. Failing that, you take regular fish sauce as a substitute into your marinade, which sits on the fish for up to 30 minutes.

    Depending on your pference, some recipes might suggest making a quick caramel to drizzle over your ca kho to and to add into the simmer. This is a very typically southern element to add to your dish, and it’s definitely optional. To heat up some sugar with a dash of water in a small pan, however, only takes a few minutes, and it definitely adds a rich, dark color and alluringly sweet taste to your final ca kho to.

    Once you’ve added your fish, caramel and any submerging liquid, simply let it sit and cook for around 30 minutes. At the halfway mark, you might want to very gently flip your fish filets over, but other than that, you’re done!

    Our Take on the Recipe

    There were a lot of great recipes to choose from, but there was one recipe (and overall insight) that we particularly liked for this dish, so we decided to base our own ca kho to based off this original reference from Hungry Huy. Nevertheless, there were a few adjustments we wanted to make to ours.

    One thing we noted in a lot of other recipes but more surprisingly not in our resource was the p-marinating of the fish in “hot” ingredients. It was something that we found gives the fish some added flavor before the braising itself, so we added in the fish-sauce based marinate that you see in the recipe below.

    Another thing we added in – although we kept it optional – was the caramel. You could really go either way with this one, but we personally pferred making a very quick caramel out of coconut sugar to add into our ca kho to.     There is so much talk nowadays about the need for things to be “healthy” gluten free this and sugar free that which lends a great hand to the South East Asian cuisines where the food is “healthy” already without meaning to be, without trying to be, without any sacrifice or disguises.

    The Vietnamese, Thai & Cambodians eat a delicious crêpe as a snack ( bánh xèo in Vietnamese. It translates as sizzling cakes from the sizzle in the pan). It is mainly enjoyed in the evenings with a few beers and a horde of friends.

    Bánh Xèo

    The light, crispy and delicate crêpes are usually filled with pork, prawns and beansprouts however clams, scallops and an array of seafood offerings are also favourites. The batter is made from rice flour, coconut milk, coconut water (or regular water), spring onions and turmeric – which gives its yellow eggy colour. It is a canvas in which you can add anything you like to it.

    The filling is usually fried off for a minute or so in a very hot but small frying pan. Then a thin layer of batter is poured over and swivelled around to cover all the surfaces of the pan then covered with a lid immediately for all the ingredients to be steamed and cooked. After another minute or so, the lid is then removed so that the batter can become golden and crispy. It is then folded over and served immediately.

    How to eat bánh xèo

    To eat the crêpe, you will need an abundance of lettuce leaves, herbs such as mint, perilla, coriander, chives and so on. A slice of crêpe is placed on a lettuce leaf in the palm of your hand, then rolled up with lots of herbs and dipped into a fish sauce-based dipping sauce (There is sugar in my n??c ch?m recipe but if you have to, you can substitute it with raw honey or maple syrup)

    Eat with friends

    These crêpes are perfect for a dinner party, summer barbecue or Pancake Day. Get a couple of table stoves out and make them at the table. Arrange herbs and raw ingredients on the table for everyone to cook their own.

    Coconut oil

    Although the crêpes are gluten free and you eat them with plenty of salad and herbs, they can still be a little naughty because they are fried in a lot of oil. I’ve found a way to make them less unruly by using Extra Virgin Vita Coco Coconut Oil. It has many medicinal properties known to be really good for you, helps your body burn more fat as well as being a good cleanser of harmful things in the body. What a bonus to making pancakes taste even better than they already do.
