Nguyên liệu làm bánh bao Dimsum: nhân bánh gồm có: thịt xay, hành lá, hành phi, tiêu, đường, hạt nêm, nấm đông cô, trứng cút. Vỏ bành bao gồm: bột mì interflour số 11, baking powder, men nở, nước mỡ, đường bột, sữa tươi hoặc nước.

– Chia bột ra các phần đều nhau, cán tròn và cho nhân vào gói cùng với trứng cút. Tuỳ theo bánh lớn hay nhỏ mà cho nhân và vỏ bánh phù hợp.

– Để bánh nghỉ 60 phút và hấp 10 phút là bánh chín

Nguyên liệu làm sủi cảo: gừng, hành lá, thịt nạc heo băm, cà rốt, cải thảo, muối, tiêu, đường, dầu mè.

– Cà rốt, phần cuống cải thảo thái vuông nhỏ, ướp với 1/2 thìa muối và chút nước.

– Bào nhỏ gừng, cắt nhỏ hành lá.

– Cho vào tô thịt nạc heo, cà rốt, cải thảo, gừng, hành lá, trộn đều.

– Thêm vào tô 1/4 thìa muối, 1/4 thìa tiêu,1/4 thìa đường,1/2 thìa dầu mè, trộn đều bằng tay.

– Nhúng tay vào nước, rồi quét nước vào rìa vỏ bánh, thêm nhân vào giữa và gói lại.

– Cho 1 ít dầu vào chảo chống dính, dầu nóng đặt bánh lên chiên lửa vừa cho vàng. Sau đó đổ nước sôi vào ngập 1/2 bánh.

Cách làm xíu mại

– Đậy nắp lại đun trong khoảng 10 – 15 phút thì lấy ra.

– Chấm cùng với hh nước tương, chút dầu mè, ớt.

Nguyên liệu làm xíu mại: Tôm tươi, thịt heo nạc (thịt thăn), mỡ phần, nấm hương khô, vỏ bánh hoành thánh, bột ngô, dầu mè và gia vị.

– Các nguyên liệu đem rửa sạch, lọc bỏ vỏ hay phần không cần dùng tới, rồi cắt hạt lựu, riêng thịt băm nhỏ.

– Trộn thịt thăn và tôm vào tô, nêm chút muối và bột ngô hòa một chút nước vào chung.

– Dùng đũa đảo hỗn hợp nhiều lần cho đến khi thấy thịt dẻo thì cho mỡ phần, nấm hương cùng với dầu mè, dầu ăn, muối và chút tiêu. Lưu ý: không nên dùng nhiều nấm vì nấm nhiều sẽ làm nhân bị chua.

Cách làm bánh hẹ người Hoa

– Cho nhân tôm vào giữa miếng bột và gấp mép tạo hình bánh.

– Cuối cùng cho bánh vào nồi hấp, có thể quét 1 lớp dầu ăn vào nồi hấp hoặc lót 1 miếng cà rốt ở dưới. Hấp bánh trong khoảng 6 – 8 phút (nếu vỏ bánh mỏng), vỏ bánh dày sẽ hấp lâu hơn 1 chút.

– Hấp bánh xong ăn nóng với nước mắm chua ngọt và rau thơm

Nguyên liệu làm bánh hẹ người Hoa: bột mì số 11, trứng gà đánh tan, hẹ rửa sạch để cho khô hết nước, bát con tép khô, 1 bó miến ngâm nước cho nở, vớt ra cắt nhỏ, nước sôi, nước lạnh, muối, tiêu trắng, dầu ăn, đường.

– Cho bột mì, đường, dầu ăn, xíu muối vào tô để nhồi bột rồi trộn đều bột lên. Tiếp theo bạn cho nước sôi vào và dùng đầu cán bột để trộn bột sẽ không bị nóng. Sau đó mới cho nước lạnh vào nhồi tiếp cho đến khi bột thành 1 khối mịn là được.

– Làm tròn khối bột lại rồi cho vào 1 cái tô và dùng màng bọc thực phẩm bọc lại để bột không bị khô, ủ bột 45 phút đến 1 tiếng.

– Bắc chảo lên bếp cho 1 chút dầu ăn, đun nóng dầu mới cho trứng gà vào và dùng đũa khuấy liên tục, trứng gà vừa chín tới thì tắt bếp xúc trứng ra đĩa cho nguội.

– Cho hẹ thái nhỏ, tép khô, miến thái nhỏ, trứng đã xào chín, bột nêm, tiêu, xíu muối vào 1 cái tô to và trộn đều lên.

Let talking a little bit about Xuan Hong recently.

After taking a break (3 months), she was back last month with video recipe “Banh Da Lon Nhan Khoai Mon – Xuan Hong” which was published on Jan 29, 2015.  We mean YT uploading by tdmaison.  She seam has a little changing especially her talking.  Last video before she took a break is “Com Tau Hu Dut Lo – Xuan Hong” which was published on Oct 15, 2014.

After watching these two videos again, we noticed a big changing but anyway everybody kinds a happy she is back.  We can see it through the number of her cooking videos’ views.  The views is increased rapidly; we believe so; for example, “Com Tau Hu Dut Lo – Xuan Hong” has 14,745 views in 4 months, “Banh Da Lon Nhan Khoai Mon – Xuan Hong” has 16,163 views in 1 month, and, recently, “Suon Hap Tau Xi – Xuan Hong” has 1,103 views in 2 days.  It’s not so bad after taking a break.
